Here in Housatonic, MA the sun is in its full glory.<\/span><span style=\"color: #000000;\">We had our final gathering at the Ramsdell Library this past weekend for <strong>Table Talk 4: Easy Prep Snacks for Kids &amp; Adults<\/strong>.\u00a0<\/span><\/p>\n<p><span style=\"color: #000000;\">This workshop was designed for people\u00a0with basic good\u00a0digestive wellness seeking alternatives to their everyday snacks.\u00a0 With the intent of appealing to kids and adults alike I geared the snack ideas to those vegetables that usually are turnoff for their bitter or slimy texture. <\/span><\/p>\n<p><span style=\"color: #000000;\">We then enjoyed a delicious treat of waffles made of cinnamon raisin mochi with apple butter and brown rice syrup. They were a hit!\u00a0 <strong>Picture is my own: Mochi Butterfly Shaped Waffles.<\/strong><\/span><\/p>\n<p><strong><span style=\"color: #000000;\">Samplings from\u00a0our Table Talk:<\/span><\/strong><\/p>\n<p><span style=\"color: #000000;\">1. <strong>Bitters-<\/strong><\/span><\/p>\n<ul>\n<li><span style=\"color: #000000;\">Brussels sprouts- great veggie but hard to take if you are not a bitters fan. Easy prep is to bake them with olive oil and salt. Bake until golden brown they are sure to please. Their bit size nature makes them a great take along snack for kids and adults.<\/span><\/li>\n<li><span style=\"color: #000000;\">Broccoli on the go- easy snack vegetable that can sometimes be more acceptable to little hands when eaten raw. Dips are great pairings for this vegetable. Add butter beans, white navy beans to some hummus or a bit of miso with almond to make a taste dip.<\/span><\/li>\n<\/ul>\n<p><span style=\"color: #000000;\">2. <strong>Slimy-<\/strong><\/span><\/p>\n<ul>\n<li><span style=\"color: #000000;\">Eggplant and Zucchini (which was not a fan of one participant that day) can be a hard sell. <\/span><span style=\"color: #000000;\">Their slimy texture aren&#8217;t the first thing that makes them delicious. But they are wonderful at absorbing flavors. Great cooking methods are grilled or baked.<\/span><\/li>\n<li><span style=\"color: #000000;\">A great snack to go- Zucchini croquettes<\/span><\/li>\n<\/ul>\n<p><span style=\"color: #000000;\">3. <strong>Swap outs-<\/strong><\/span><\/p>\n<ul>\n<li><span style=\"color: #000000;\">Potato Chips- Kale Chips- Dehydrated with some seasonings they are delicious.<\/span><\/li>\n<li><span style=\"color: #000000;\">Carrot\u00a0Sticks w\/Peanut Butter- Veggie swaps like Cauliflower, Yellow Pepper\u00a0w\/avocado.\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 <\/span><\/li>\n<li><span style=\"color: #000000;\">Waffles- Mochi a delicious brown rice treat offering more nutrition and is delicious. <\/span><\/li>\n<\/ul>\n<p><span style=\"color: #000000;\">So I hope you take some trips to the store or farmers markets if they have opened up in your area.\u00a0 Grab some vegetables and have fun.\u00a0 I truly enjoyed meeting all of you and hope to see you soon.<\/span><\/p>\n<p><span style=\"color: #000000;\">If you have enjoyed these Table Talks, please share with the <a style=\"color: #000000;\" title=\"GB Libraries\" href=\"http:\/\/gblibraries.org\/about-us\/services\/\">Great Barrington Libraries<\/a> if you are in town.\u00a0 <\/span><\/p>\n<p><span style=\"color: #000000;\"><strong>Upcoming Workshop: <a style=\"color: #000000;\" title=\"Kushi Summer Conference 2016\" href=\"http:\/\/www.kushiinstitute.org\/2016-annual-summer-conference-this-years-theme\/\">Kushi Institute- Summer Conference<\/a> July 1st-August 14th.\u00a0 <\/strong><\/span><span style=\"color: #000000;\"><strong>I will be with Virginia M.
