Spring into Health: Table Talk 4: Easy Prep Snacks for Kids & Adults

May this find you in the sun wherever you may be. Here in Housatonic, MA the sun is in its full glory.We had our final gathering at the Ramsdell Library this past weekend for Table Talk 4: Easy Prep Snacks for Kids & Adults

This workshop was designed for people with basic good digestive wellness seeking alternatives to their everyday snacks.  With the intent of appealing to kids and adults alike I geared the snack ideas to those vegetables that usually are turnoff for their bitter or slimy texture.

We then enjoyed a delicious treat of waffles made of cinnamon raisin mochi with apple butter and brown rice syrup. They were a hit!  Picture is my own: Mochi Butterfly Shaped Waffles.

Samplings from our Table Talk:

1. Bitters-

  • Brussels sprouts- great veggie but hard to take if you are not a bitters fan. Easy prep is to bake them with olive oil and salt. Bake until golden brown they are sure to please. Their bit size nature makes them a great take along snack for kids and adults.
  • Broccoli on the go- easy snack vegetable that can sometimes be more acceptable to little hands when eaten raw. Dips are great pairings for this vegetable. Add butter beans, white navy beans to some hummus or a bit of miso with almond to make a taste dip.

2. Slimy-

  • Eggplant and Zucchini (which was not a fan of one participant that day) can be a hard sell. Their slimy texture aren’t the first thing that makes them delicious. But they are wonderful at absorbing flavors. Great cooking methods are grilled or baked.
  • A great snack to go- Zucchini croquettes

3. Swap outs-

  • Potato Chips- Kale Chips- Dehydrated with some seasonings they are delicious.
  • Carrot Sticks w/Peanut Butter- Veggie swaps like Cauliflower, Yellow Pepper w/avocado.                                                                     
  • Waffles- Mochi a delicious brown rice treat offering more nutrition and is delicious.

So I hope you take some trips to the store or farmers markets if they have opened up in your area.  Grab some vegetables and have fun.  I truly enjoyed meeting all of you and hope to see you soon.
